Mineral del Monte, Hidalgo, will once again dress up for the celebration with the 17th edition of the International Paste Festival, which will take place from October 10 to 12, 2025. This event not only celebrates one of the state’s most emblematic dishes, but also the deep cultural heritage that unites Mexico and England through mining and culinary history. Here are the details:

Paste is a pastry of British origin—specifically from Cornwall—that was brought to Mexico by English miners in the 19th century. These workers migrated to Hidalgo to work in the region’s mines, bringing with them this practical, durable, and nutritious food.

Over time, paste was adopted and adapted by the people of Hidalgo, incorporating local ingredients and typical Mexican flavors. Thus, variations emerged with mole, beans with chorizo, tinga, rajas with cheese, cajeta, apple, among many others. Today, this dish is a symbol of regional identity and local pride.

And in recognition of its importance, the Congress of the State of Hidalgo declared paste a Gastronomic and Cultural Heritage and Mineral del Monte the “Cradle of Paste” in Mexico.
